Baked Apple Pancakes

breakfasts, romantic breakfasts in bed, holiday celebrations, elegant entertaining,
back yard get-togethers with close friends, and intimate, light fireside suppers
for two. It also makes a great gift!

Featured Vermont.com Recipe: Stone Hill Inn's Baked Apple Pancakes |
3/4 c. flour
3 T. sugar
1/4 t. salt
3 eggs
2 T. butter, melted
|
3/4 c. light cream
2 lg. apples, peeled and thinly sliced
2T. brown sugar, firmly packed
1/2 t. cinnamon
2T. melted butter
|
* Mix the flour, sugar, salt, eggs, and 2T. melted butter together.
* Spray a 10-inch ovenproof skillet with non-stick spray, and preheat the skillet
over medium heat.
* Pour in the batter all at once and cook until set.
* Lay apples over top, completely covering the surface.
* Combine brown sugar, and cinnamon; sprinkle over top of the apples.
* Pour the remaining 2T. of melted butter over all.
* Bake in a 400 degree oven for 6-8 minutes.
* Cut into wedges. Place a wedge on each serving pate and dust with powdered sugar.
Serve warm with pure Vermont Maple Syrup. Serves 4.

True or False?
Fact:
The first snowboard was invented in Vermont.
False!
- The first snowboard was actually developed out West in the 1920's, but Vermont
has had a large role in making it the huge sport it is today. The snowboard sort
of languished for many years until Manchester's Jake Burton Carpenter developed
the snurfer (snow-surfer)... you may know him now as the founder of Burton
Snowboards. The first snowboarding competitions were also held in Vermont in the
late 1970's and early 1980's at Suicide Six in Pomfret.
