Maple Oatmeal Pancakes
Submitted by:
Whether you decide to walk our wooded trails, cuddle a spring lamb, listen to a
brook, or simply sit by the heated pool and watch the birds, we believe you will
appreciate the special country atmosphere of spring and summer in our Northern
Vermont location. Just 35 minutes from vibrant Burlington, the Inn is truly a
four-season retreat.
Featured Vermont.com Recipe:
Maple Oatmeal Pancakes, by The Inn at Buck Hollow Farm |
1 1/2 cups oatmeal
2 1/2 cups milk
1 cup flour
1 Tbsp maple syrup
1/2 tsp salt, optional
|
1 tsp cinnamon
1 Tbsp baking powder
1 egg beaten
1/4 cup oil
|
* In a large mixing bowl, pour milk and maple syrup over oatmeal.
* Let sit for 10 minutes.
* Sift flour, add salt, cinnamon and baking powder; mix well.
* Add to oatmeal mixture.
* Add egg and oil, mix well. Let rest for 3-4 minutes.
* Pour batter onto hot griddle.
* Flip when they are puffy, full of bubbles and lightly brown on one side.
* Serve with maple syrup, maple butter or maple jelly. Makes 10 to 12 pancakes.

mean another $1.4 million in state coffers, but critics caution that the tax would
target the wrong mark: the state's financially beleaguered college students."

Fact: Vermont is the largest producer
of maple syrup in the country.
True! - Vermont scored 37% of the
total U.S. maple syrup production in 2000. In that year, the 2000 or so maple
producers in the state managed to boil down about 460,000 gallons of syrup worth
an estimated street value of $13,340,000. How sweet is that!
