Featured Vermont.com Recipe: Shredded Potato, Onion, and Cheddar Cheese Dutch Pancakes by The Grey Fox Inn The Dutch Batter: (Makes 15 Pancakes) 1/2 gallon milk 7 Eggs 6 cups of flour 1/4 cup sugar 2 teaspoons baking powder 2 teaspoons salt 2 teaspoons vanilla 1/4 pound melted butter The Dutch Pancake: 8 ounces of the Dutch Pancake Batter 1 baked potato, shredded (or substitute one pre-made hash brown, crumbled) 1/2 cup diced onion 1/2 cup shredded cheddar cheese 3 tablespoons butter Sour Cream Applesauce * In a twelve inch skillet over medium-high heat, melt 2 tablespoons of the butter and sauté the shredded baked potato and onion. * Add pancake batter and gently swirl pan so as to evenly distribute batter and ingredients. * Sprinkle shredded cheddar evenly over the top, Drizzle a small amount of batter over the cheese in a criss-cross pattern (like a tic-tac-toe game). * Top with remaining tablespoon of butter. When bottom of pancake is brown, slide the pancake onto a plate. * Place the skillet over the plate and quickly flip the pancake over to cook the cheese side.
