Wild Wings Cross-Country Ski Center

Wild Wings is a small, family-oriented cross-country ski center located within the
boundaries of the Green Mountain National Forest in Peru, Vermont. A converted

Dutch Beer and Gouda Fondue, by Taylor Farm Cheese |
Rub around the inside of a medium saucepan
- 1 clove garlic, peeled
- 1 cup Heineken or other Dutch beer
- 1 Tbsp lemon juice
Toss together
- 5 tsp corn starch
- 12 ounces Farmstead Gouda, grated
- 4 ounces Aged Gouda, grated
(or experiment with other combinations of our cheeses: Maple Smoked and Chipotle?
Aged and Garlic?)
- Add in handfuls of cheese to the beer, stirring to melt after each addition.
- Season with freshly ground pepper.
- Serve warm with:
cooked smoked sausages, steamed broccoli, crusty bread, or apples.
